Mushroom snack cakes

Ingredients

champignon hats (medium) 40 pcs
chicken fillet (boiled) 200-250 g
walnuts 100-150 g
cream 33% fat 100 ml
salt pepper taste.
balsamic vinegar 2 h l
olive oil 1-2 tbsp
lemon juice 1 tbsp

Cooking method

  • 1. Remove the stems from the mushrooms, salt and pepper the caps. Mix together lemon juice, olive oil and balsamic vinegar. Grease the mushroom caps with this mixture from all sides, put on a baking sheet covered with baking paper and bake in an oven preheated to 200 degrees for ten minutes.
  • 2. Grind the nuts as small as possible and fry in a dry frying pan until lightly golden, cool. Beat chicken fillet in a blender, adding cream, until mousse. Season with salt, pepper, add a third of the nuts and stir until smooth.
  • 3. Fill the baked and cooled mushroom caps with mousse, combine in pairs. Roll in the joints in the remaining nuts. Decorate with a small ball of mousse and a piece of walnut.
