Bulgarian eggplant

Ingredients

Eggplant 1 medium
Tomatoes 2 medium
Goat cheese or feta cheese 40 g
Mint 1 bundle
Parsley 1 bundle
Olive oil 2 tbsp. l
Salt pepper taste

Cooking method

  • I bring to your attention another recipe for the outgoing summer. This Bulgarian recipe is borrowed from the magazine \ "7 days \".
  • Cut tomatoes, peeled, cut into cubes, salt and pepper, combine with chopped mint leaves and simmer in 1 tbsp. l of oil 10 - 15 minutes. Tomatoes don't have to be very juicy to keep their shape.
  • Cut the eggplants into 5-10mm slices, season with salt, sprinkle with oil and bake on a sheet of foil for 20 minutes (200 degrees).
  • Mash goat cheese with chopped parsley and olive oil (optional).
  • We spread the \ "turrets \" in the following order - eggplant, tomato, eggplant, cheese and eggplant again. Decorate with cherry tomatoes and mint sprigs.

I have a question: can you not stew tomatoes beforehand? Will they still fit in the oven anyway? And cook tomatoes for only 10-15 minutes along with mint, and in the oven only one eggplant is pre-baked (you can fry in the microwave or in a pan, previously seasoned in salt).
