Ingredients

Saf-Moment yeast 2 tsp
peeled rye flour 300 g
seeded rye flour 90 g
wheat flour 1 grade 100 g
dry wheat leaven 1 tbsp. l.
fermented rye malt 2.5 tbsp. l.
salt 1 tsp
brown sugar 2 tbsp. l.
natural honey 1 tbsp. l.
unrefined sunflower oil 2.5 tbsp. l.
ground coriander 2 tsp
water 360 ml

Cooking method

  • Place the ingredients in the bucket of the bread machine. Start the Dough program, after the end of the first batch, turn it off and start again. Control the bun by adding seeded rye flour. After the end of the first distance, turn off the stove. Form a bun with greased hands, sprinkle with whole coriander grains and leave to stand until the dough has increased 1.5-2 times. Usually no more than an hour. Then turn on the baking for 1 hour. Total: kneading 20 minutes, growing 1 hour 20 minutes, baking 1 hour.

Oh, what a beauty !! Can you please tell me, I have a mixture for baking Borodinsky, it contains: swelling rye flour, dry rye tea leaves, malt mixture, wheat gluten, premium wheat flour. Can it replace sourdough and malt? The instructions say what to add dry up to 20% of the flour mass. Is it necessary then to reduce rye and wheat flour?
