Siberian rolls

Ingredients

Dough:
Wheat flour 1c. 250g.
Fresh yeast 6d.
Water 250g.
Dough:
Opara
Wheat flour 1c. 250g.
Salt 6d.
Sugar 5d.
Butter (I have ghee) 20g.
Powdered milk 20g.
Lactic acid whey (not used) 0-120g. (until dough is medium)

Cooking method

  • Prepare dough. Heat the water to 37C. Grind the flour with your hands with yeast, add to the water. Knead with a combine at 2 speeds for 2 minutes. Cover with foil and leave for 4 hours at 30C.
  • Next, knead the dough from all the ingredients, except for the butter:
  • 2 minutes at 1 speed
  • add melted butter
  • 5 minutes at 2 speeds
  • The dough does not stick to the bowl and does not smear along the bottom. Add serum if necessary (I did not add). Leave in a warm place for 1.5 hours. I set the dough mode in MV Brand.
  • Then knead the dough, divide into 2 parts, roll into balls, cover with a towel and leave for 10 minutes.
  • Then flatten the balls, pinch into a bar and roll them into a bundle of the required length. Then flatten one end, and make the other pointed and put into the flattened one. Pinch with cuff and roll up to smooth the seam.
  • Next, place the blanks on baking paper. Place any round object in the middle so that the hole does not float during proofing. I put the 800g can, wrapping it with baking paper:

  • Cover with a towel and leave for 40 minutes. Sprinkle with water before baking.
  • Preheat the oven to 250C with a baking sheet. Transfer the blanks to a baking sheet, sprinkle with water.
  • Bake for 10-15 minutes until golden brown. Kalachi are baked very quickly in a very hot oven.
  • Cool on a wire rack.
