Ingredients

Dough:
Water 100g.
Wheat flour 80g.
Fresh yeast (dry) 1d. (1 \ 5h. L.)
Dough:
Opara
Water 200g.
Wheat flour 400g.
Powdered milk (cream) 30g.
Fresh yeast (dry) 9g. (1h. L.)
Malt syrup (I have maple syrup) 10g.
Olive oil 11d.
Salt 10g.

Cooking method

  • Prepare dough. Dissolve fresh yeast in water (mix dry with flour), add flour. Cover with foil and leave for 10-12 (no more than 16) hours at room temperature. I left it overnight.
  • Pour the dough into a bucket of a bread machine, add water. Switch on the kneading of any program for 2-3 minutes, so that the dough is mixed with water. Add syrup, butter.
  • Grind fresh yeast with flour with your hands (just mix dry yeast), pour into a bread maker, add salt, milk powder. Dough mode. The gingerbread man is soft, elastic. After the end of kneading, leave the dough in the bread maker for 10 minutes. Then turn off the bread maker, take out the dough, knead, form a ball. Place in a container, cover with foil and leave in a warm place for 1.5-2 hours until the dough increases 2.5-3 times. I set the Dough mode in the Brand multicooker for 2 hours.
  • Then knead the dough, form a loaf, sprinkle it with flour, lay on a baking sheet covered with paper, cover with a towel and leave for 1-1.5 hours.
  • Before baking on the loaf, make a cut along the entire length, sprinkle with water.
  • Bake in an oven preheated to 220C for 15 minutes, then lower the temperature to 200C and bake for another 20-30 minutes until the bread is ready. Ready bread, when tapped on the bottom, emits a dull sound.
  • Cool on a wire rack under a towel.
