Mousse Green Velvet

Ingredients

avacado 2 pcs
egg whites 2 pcs
cream, 33% fat 100 ml
salt 0.5 h l
freshly ground black pepper 0.5 h l
sauce taste
lime juice 1 tsp
zest with half a lime
kiwi 1 PC

Cooking method

  • 1. Peel the avocado and puree with a blender with lime juice and a tablespoon of cream (take from the total amount). Pepper, add zest and sauce.
  • 2. Beat the egg whites and salt into a strong foam, whip the cream until chantilly and combine with the puree.
  • 4. Decorate with kiwi cubes and serve immediately.
