Peasant sourdough bread in a bread maker

Ingredients

Rye sourdough at the peak of growth 100% 300 ml.
Water 55 ml.
Milk 100 ml.
Sugar 1 tbsp. l.
Salt 1.5 tsp.
Sunflower oil 0.5 tbsp. l.
Wheat flour 310 gr.
Rye flour 20 gr.

Cooking method

  • I took the recipe from here:

  • I counted the amount of flour and water for sourdough and got a very tasty gray bread. The most favorite in our family from wheat and rye bread.
  • Put the sourdough in a bucket of a bread machine, then mix flour, milk with water and stir sugar in them, pour it into a bread machine.
  • Next, to knead the dough, put the bucket in the bread maker on the "Pelmeni" mode, add salt a few minutes before the end of the kneading, then sunflower oil.
  • Then, since it is cool with me, I take out the bucket from the bread machine, put it in a warm place to rise for 3 hours, and then into the bread machine for the Baking mode for 1 hour.

Note

If you have wheat sourdough, not rye, then take 210 g of wheat flour, and 120 g of rye flour.

I always stir them together in a liquid, because when I bought the stove I poured the solid down according to the instructions, and the liquid on top and my bottom was scratched. Before that, sourdough bread was baked in the French mode, it turned out delicious, they decided to experiment with the "manual" raising, the experiment failed.

Thanks for the recipe !!! The bread is super! delicious, so soft !!!!! I will always bake it !!!! the only thing, I would not bake for an hour, but 5-10 minutes less. Maybe this is a feature of my HP, but the crust, or rather the sides, are a little overcooked. But these are trifles. My husband liked it too! Of all my leavened breads, this is the best! I'll try to experiment with flour and additives! and what delicious toasts from it, mmmmm))) and most importantly, this bread stays soft longer than others !!! I have already the third day and everything is like the first!

UNREALLY soft and delicious !!! I haven’t had anything like this, it surpassed the first experience !!!! Instead of water + milk, I made only milk, since we have 1.5% milk! I added a little rye flour, premium wheat and instead of sunflower oil, I have GHI oil))))) It turned out to be a soft crumb, crispy crust and a funky taste))))

I have a Panasonic, it was in the evening and to knead, and then it was lazy to follow, I put it on French-6 hours, when it was kneading, it seemed that there was not enough liquid, I added it. I was afraid of one sourdough, half a tsp. poured yeast. As a result, the bread turned out to be beautiful and very soft, even a little rubbery ... probably due to the fact that the water was not added immediately, and then ..

Verka, theoretically, salt and oil inhibit yeast. Virtually no effect, I bake according to a similar recipe for the second year, dissolve dry in liquid, pour oil on top. I don't sow flour. And everything works out.

Kneading was done in a bread maker on a yeast bread program, and then baked in a multicooker, since Mulinex's programs are not designed, in my opinion, for leavened breads. Cycles too short, I don't have enough time.
