Pumpkin cream soup with cheese

Ingredients

pumpkin 700 g
potatoes 1-2 pcs (large)
chicken broth (I cooked from fillet) about 300-500 ml
cream 200ml
bulb onions 1 piece (large)
hard cheese 50 g
olive (or sunflower) oil
curry 1 tsp
cinnamon (I don't use - in my opinion, too much spices) pinch
bay leaf (I use hops-suneli)
salt
Red pepper

Cooking method

  • In brackets - my comments on the original recipe from the magazine "The Only".
  • Cut the onion into half rings and fry in olive (sunflower) oil until transparent in a saucepan, adding bay leaves (hops-suneli) and red pepper (I fry in a pan). Peel the pumpkin and potatoes, cut into cubes and place in a saucepan (pumpkin on top). Pour the broth over (so that the pumpkin is not covered a little) and simmer until the vegetables are tender, 20-30 minutes (after that I add the onions).
  • Whisk the soup in a blender, removing the bay leaf. Pour in the warmed cream and bring to a boil. While simmering, grate the cheese and add it to the soup.
  • Heat to melt the cheese. Season to taste with salt, add curry and cinnamon (I do not add cinnamon, it does not harmonize with my hops-suneli). Serve with croutons.

On my own behalf, I will add that over the past few months I have prepared it countless times, because the family tortured me with requests. Everyone eats it! For pumpkin lovers, you can increase the amount of potatoes. I add a little more cheese.

By the way, I also do not overload with spices, I put them only when I cook the lean version without cream.
