• With the Annunciation to you! Dear members of the forum, I read this recipe many, many years ago in the magazine "Sweet Smak", number 2 1995. The recipe is really given for shortbread dough. I'll post the original recipe at the end. But it just so happened that in our family we cook this pie from a puff, quickly. And often with a 2 m filling option (there is always canned food somewhere in the storehouse) It turns out very tasty and beautiful. So I decided to share with you for the Annunciation and Palm Sunday. Today, unfortunately, I cannot do it myself, because I am sitting at work, so the photos are presented, alas, of low quality from the magazine. I'll share mine as soon as I bake it!
• Cooking method:
• • Wash fish fillets and pat dry with a napkin. Drizzle with lemon juice and pepper.
• • Divide the leeks into separate sheets and blancher in boiling water for 3 minutes.
• 
• • Then immediately rinse with cold water and let it drain.
• • Make a floor of leeks on an absorbent towel, laying them slightly overlapping, blot on top with a napkin.
• 
• • Place the fish on the leek and wrap in the onion leaves.
• 
• • Divide the dough into 2 pieces measuring 20x40 cm. Cut each dough piece in the shape of a fish.
• 
• • Put one "fish" from the dough on a baking sheet lined with parchment. Put pink salmon wrapped in leeks on it and cover with the 2nd "fish". Press the edges well.
• I do it differently: I put one layer, then the filling, cover it with the second one, press the edges and cut the fish out of 2 cakes at once. (The main thing is that you don't cut off the filling).
• • We make cuts along the edges, as if it were fins and a tail.
• • Make small neat cuts on the carcass with scissors. It is better to do it not as in the photo, but in a checkerboard pattern, to fully imitate the scales.
• 
• • Bake for 30-40 minutes over medium heat.
• • Serve both hot and cold!
• If you make a pie with a 2 m filling option, then knead the canned salmon, drain the juice from canned food), mix with boiled crumbly rice, fried onions, you can season with lean mayonnaise, but this is not at all necessary. It turns out delicious if you add olives and diced pickles. Add chopped eggs on non-lean days.
• Put the filling on a layer of dough, cover with the second, and then proceed as described above.

• And I also remembered how 10 years ago one fish, right from the baking sheet, was stolen from us by a guest, eternally hungry shorthaired pointer, whom my dad sheltered after being wildly cruel in an apartment on a chain and with a ration of 1 loaf of bread a day. The dog's owner died, and the neighbors did this to him. Before that we had our own Kurzhaarikha, but by that time she had retired due to old age. So Dad decided to take the sufferer, especially his beloved breed. But the dog was so hungry that he ate without stopping, stole anything, growled, snatching our food from his hands, it was just horror. We suffered with him for 10 days, but everything was in vain, he still could not eat, something became visible to the dog's brain from such stress. It was scary for the children. I had to give up the dog.

200 g of chilled vegetable margarine,
200 g dietary cottage cheese,
200 g flour
1/2 h. D.salt

Filling: the same as the 1st option.

To grease before baking:
1 egg, 1 tbsp. l. milk
Advice from the author of the recipe:

• The fish should not be pre-salted, as salt absorbs salt and aroma. The fish becomes dry and the taste deteriorates.

• The dish will look simply gorgeous if the fish is greased with water and decorated with caviar.
