Ingredients

Dough:
Flour 525 g
Salt 1 tsp
Baking powder 3 tsp
Cinnamon 1 tsp

Vegetable oil 200 ml
Pumpkin 0.5KG

Glaze:

Milk for glaze,

Cooking method

  • In the original recipe, the pumpkin is baked to make the pumpkin puree. I think this is unnecessary trouble. She made mashed potatoes in the most usual way: cut the pumpkin (peeled) into pieces, poured a little water (0.5 cups) and cooked until tender. It took 10-15 minutes. If there is still water left after the pumpkin has become soft, drain it. I made a homogeneous mashed potatoes with an immersion blender. Let it cool slightly (so that it does not roll eggs in the total mass).
  • Sift dry ingredients: flour, salt, baking powder and spices. Do not be intimidated by allspice. It fits very harmoniously into the overall taste and aroma of the cake.
  • Whisk eggs and sugar in a large bowl. Add vegetable oil, then pumpkin puree. Add sifted flour, ripper, spices, salt. Toss and pour into a greased and floured pan.
  • The level of the dough in the mold should not exceed at least 3/4 of the height, or even only half. The product rises very much when baking.
  • She baked one form at a temperature of 180 degrees (the walls are thick, not a tin) for 1 hour 10 minutes, that is, 70 minutes. But you are looking over your oven. Perhaps 50 minutes in another form will be enough.
  • The glaze is very simple. It can be resin, or lemon juice. Just dissolve the icing sugar in lemon juice or milk.

At the same time, 2 do not get into the oven for me and the second form with the dough costs a long time waiting in the wings, so it does not have the same germination as the first.

A very simple and quick recipe. I really like it when vegetable oil is used, not butter - it is not always not in the freezer. Then it needs to be thawed for a long time, and the idea to bake comes spontaneously.

Great cupcake! Very tasty. Though not lean. It is made easy and eaten quickly. And I also cut it in half and smeared it with my homemade plum jam. My husband said it tastes better than Tula gingerbread. Thanks for the recipe!
