kefir (or apple juice) + 1 egg 350 ml
apple cider vinegar 6% 1.5 tbsp. l. (metal.)
vegetable oil 3 tbsp. l. (metal.)
sugar 1 tbsp. l.
salt 1.5 tsp.
rye malt (dry) 2 metal. Art. l. (50 g)
boiling water (brew malt) 100 ml
rye bran 1.5-2 tbsp. l. (metal.)
wheat bran 1.5-2 tbsp. l. (metal.)
dry yeast Saf-moment 1.3 tsp

Cooking method

  • Add ingredients according to the instructions of your bread maker.
  • I have a Kenwood 450, I pour in liquid first, including vinegar and oil. Then I add all the flour, sugar and salt. Then I put in the brewed malt without waiting for it to cool completely. Sprinkle with bran and yeast on top.
  • Fast Whole Grain Program (2:39), medium crust, weight 750 g
  • Pay attention, where the recipe says metal., I use an ordinary metal tablespoon, and in other cases a measuring spoon from HP.

I cooked this bread more than 10 times - the failure was only 2 times: the very first time I poured 280 ml of kefir (along with an egg), added another 50 ml of kefir when kneading - there was still little liquid. Once for some reason the roof fell, the reason remained unclear.
The Kenwood 4 "Fast Whole Grain" program works great: 5 minutes warm up at the beginning, plus adding hot malt to compensate for cold kefir or juice (I usually have it from the refrigerator).
You can use kefir, milk, any juice as a liquid. If there is not enough kefir or juice, I sometimes add water, but I have never done it completely on water. In total, 350 ml should be obtained with the egg - the bran absorbs liquid well.
