Ingredients

1 glass = 200 ml.
dough:
butter 150 gr.
sugar 2/3 cup
yolk 3
sour cream 20% 2 full Art. l.
flour 2 glasses
baking powder 1 tsp
vanilla 1 gr.
a pinch of salt
shape 26 cm in diameter. cover the bottom with baking paper)
For filling:
sour green apples like Antonovka. (peel and cut into pieces) 1 kg
water 1/2 cup
sugar 3 tbsp. l.
juice of 1 lemon
lemon peel 1/4 tsp
vanilla pudding (not instant 1 tbsp. l.
butter (melt) 20 gr.
raisins (I did not use it, I replaced it with 40 grams of chocolate drops or dark chocolate cut into pieces) 100 g
for meringue cream:
protein 3
sugar 4 tbsp. l.
some citric acid crystals

Cooking method

  • I love apple pies, but I just fell in love with this one - delicious, juicy and not at all difficult to prepare !!!
  • Dough:
  • Mix all the ingredients and knead into a smooth shortcrust pastry, roll into a ball and rest for 15-20 minutes.
  • Through trial and error, I found a simple way to distribute the dough in the form, so that you get a beautiful basket. So:
  • Lay a bit more than half of the dough on an even layer on the bottom of the mold, roll up "sausages" of the same thickness from the rest of the dough and place the edges of the mold in a circle.

  • Then spread the dough with a tablespoon, pressing it against the side of the mold, and then make the cloves with a fork, like this

  • On top I place a mold of a smaller diameter, the bottom of which is greased with oil, bake in a heated to 180 ° C oven for 25-30 minutes.

  • Remove the inner mold and grease with yolk, put in the oven for 2-3 minutes. this is necessary so that the bottom does not get wet from the filling. In this recipe, I send the bottom with chocolate drops (chopped chocolate), which will also keep the bottom from getting wet!

  • Prepare apples: peel and chop, add water and sugar and boil for 7-8 minutes. I did it in the microwave, then put it in a colander to drain the juice.
  • Mix lemon juice with pudding and butter.
  • Add to apples, stir and place in a baked basket.

  • Then beat the whites with sugar and citric acid until firm peaks and, using a culinary bag (syringe), siphon the meringue on top of the pie.

At first, everything went fine: the dough was excellent, but I couldn't post it in the forum as beautiful as yours. It would be okay, but the second form, which I put in, turned out to be slightly small and as a result, when after 25 minutes I looked into the oven, I almost fainted: the dough rose to the middle of the second form. And it is not small, for a cake ... The dough was not baked in the prescribed 25 minutes, and after another 20 minutes I just took everything out of the oven. I pulled out the inner mold, and the dough rose behind it, although the mold was covered with butter. And I got a thick ring with a beautiful round hole without a bottom. There was no choice, I started raking the already baked dough to the bottom, leveled it, and then according to the recipe. But since the cake was baked for a very long time, the outside dried up. BUT! all the same it turned out awesomely tasty !!!!!!

My wife and I baked this yummy, there weren't enough apples and we poured 2 bananas into it, it turned out very unusually tasty. They eaten - I didn't have time to take a picture) At the expense of the form, we used one, standard form, and put a small frying pan on top, having previously unscrewed the handle from it, it turned out that nana)
