Lemon fairy cake

Ingredients

Cakes:
Eggs 6 pcs.
Sugar 2 tbsp.
Flour 2 tbsp.
Baking powder 1 tsp
Cream:
Milk 1 l
Sugar 2.5 tbsp.
Oil drain. 500 g
Lemons 2-3 pcs.
Semolina 5 tbsp. l.
Glaze:
Cocoa 4 tbsp. l.
Sugar 6 tbsp. l.
Milk 4 tbsp. l.
Oil drain. 50 g

Cooking method

  • My family's favorite cake, and since the family is large, the cake is appropriate - it turns out soooooooooooooooooooooooooooooooooooooooooooooo. If desired, of course, you can reduce the amount of ingredients as needed.
  • The cake is delicious and tender. Try not to regret it. So:
  • For 1 cake:
  • Beat 3 eggs and 1 tbsp sugar. Beat for a very long time for 7 minutes, until a fluffy light mass. Add 0.5 tsp. baking powder with 1 tbsp of flour toss. Mix well, pour into a mold with a diameter of 26 cm and bake in an oven preheated to 180-200 degrees until tender (check with a stick).
  • Bake a second, exactly the same biscuit. When cool, cut in half. Thus, 4 cakes are obtained.
  • Cream:
  • Pour semolina into cold milk, stir and bring to a boil. Boil for a couple of minutes, turn off and leave aside until it cools completely.
  • Grate the washed lemons or grind them in a blender, after removing the seeds! ... Attention, the taste of limns is very important, they should be very aromatic, but not bitter. Georgian lemons do not fit, they give a bitterness, so once I ruined the cream. It was, of course, edible, but not so as to gnaw off my hand, as they usually try to me when I make this cake.
  • Grind the softened butter with sugar until white, add lemons and add a little, whisking the cooked semolina. Beat the cream well. It will be light and fluffy, keep its shape well.
  • Assembly:
  • Smear the cakes with cream, coat the edges, align. Refrigerate until frosting is done.
  • Glaze:
  • Mix cocoa with sugar, add milk and bring to a boil. Add butter and stir. In principle, make the icing you like. I made both this one and chocolate with cream.
  • Pour over the cake with slightly warm icing. And it is advisable to put it in the refrigerator for a day so that it is soaked. Before serving, it is advisable to hold it at room temperature for 30-45 minutes.

Note

It is done quite quickly, not troublesome if there is a blender, since grated lemons usually asked their men to grind them.

For me as a child, the taste of this cake was the taste of the new year!
Mother always baked it for the new year, just a little differently. In our family variation, two butter-biscuit cakes were baked, one white, the second with cocoa, chocolate, which were then cut and alternated. And the glaze was cooked not in milk, but in sour cream. I can feel this thick chocolate aroma directly!
