Rice pudding with pineapple (Maida Heatter)

Ingredients

water 180 ml
salt 1/4 tsp
butter 7g (1/2 tablespoon)
round rice (cereal) 50 g
canned pineapple pieces 250 g
cream 33% 240 ml
eggs 110 g (2pcs medium)
sugar 40 g
vanillin

Cooking method

  • it's magically delicious. again, like creme brulee!
  • boil water in a small 1.5L thick-walled saucepan. add salt, oil and rice, stir. reduce heat, cover and cook for 25 minutes, or until rice has absorbed all the water.
  • Throw pineapples on a sieve.
  • preheat the oven to 180C. grease a glass or ceramic fine 1.5L oven dish with oil.
  • after 25 minutes pour cream into rice, stir, bring to a boil, remove from heat. if your cream is 20% fat, add a piece of butter.
  • in a large bowl, whisk the eggs lightly until smooth (do not beat). gradually pour hot rice with cream into the eggs, stirring occasionally. add sugar, vanillin and pineapple, mix thoroughly. pour into prepared mold.
  • into a large, shallow mold (it should not be deeper than the one with the puddingm) pour hot water up to half of our pudding mold. put the form with the pudding in the form with water, place the entire structure in the oven.
  • bake at 180C for 40-45 minutes. we check as standard - with a short knife we ​​pierce the dish in the center, it should come out dry.
  • get the mold out of the water, cool to room temperature, then in the refrigerator for 3-4 hours. serve cold, very tasty with strawberry sauce.
  • it was delicious for me, both warm and cold, and the pineapple is very appropriate here.
