Perlotto (Cuckoo 1054)

Ingredients

pearl barley 1 measuring cup
bulb onions 1 middle head
fresh garlic 1 clove
butter 1-2 tbsp. l.
dry white wine 1/2 measuring cup
chicken broth 2.5-3 measuring cups
sour cream 2-3 st. l. with top
grated cheese 2-3 pinches (took sheep cheese)
lemon zest 1 tsp
fresh parsley 1 tbsp. l. finely chopped
salt pepper taste

Cooking method

  • Cooking in the Multicooker CUCKOO 1054
  • It is better to soak pearl barley in water for several hours, then drain the water.
  • Switch on browning mode. Heat the butter, add the crushed garlic, finely chopped onion. Simmer the onion until the liquid evaporates. Throw the garlic out of the onion.
  • Add pearl barley to the onion, mix and fry together with the onion for several minutes, until the cereal becomes "transparent" in appearance.
  • Add dry white wine to the groats, mix and let the wine evaporate so that the groats begin to fry again. Deactivate browning mode.
  • Add chicken broth, salt, pepper to taste to the cereal, turn on the Cook mode, bring the porridge to readiness, during which time the cereal will be ready and steamed.
  • Turn on the Browning mode, add sour cream to the porridge, mix. Add lemon zest, finely grated cheese, mix and heat, stirring for 1-2 minutes. Disable the multicooker.
  • Place the perlotto on a plate, sprinkle with a little freshly chopped parsley on top.
  • Can be served at the table, bon appetit!

  • If the porridge turns out to be thick after the Kashmavka mode, then in the repeated mode Frying, you can add a little chicken broth, along with sour cream and cheese - then we get the consistency of rice risotto from the barley, an oily sticky mass!

Recently I was looking through a magazine and saw an article about Lithuanian cuisine and a description of cereal dishes, including a mention of perlotto. It became clear that this was due to pearl barley ... but how to do it, nothing was written.

I went to the Internet to search ... I found a recipe for perlotto from Elena Chekalova.

In the original, perlotto is cooked on the stove, from pearl barley and according to the principle of risotto, the dish as a result should turn out to be soft, liquid and viscous, like rice risotto.

I cooked Kuku in a slow cooker, so my perlotto turned out to be drier, the grains of cereal are separated.

But, it turned out deliciously!
The perlotto recipe has the right to cook and live in the future!

And they didn't eat barley before the multicooker, we only had it for fishing
