Boiled vegetables with Vinaigrette dressing

Ingredients

medium-small potatoes in their skins
fresh white cabbage
broccoli (from the freezer)
green beans (from the freezer)
refueling:
vegetable oil
lemon juice (vinegar)
salt
sugar

fresh cranberries
dried lemon

Cooking method

  • Wash the potatoes, peel them and put them to boil in water, salt. Boil the potatoes in their skins until tender.
  • Add to the potatoes the white cabbage, cut into large pieces, broccoli from the freezer, green beans from the freezer, mix gently, salt to taste. All vegetables should be covered with water, and if there is little water in the pot, add hot water from the kettle.
  • Bring the cabbage to readiness, you need to try with a knitting needle or knife.
  • Gently transfer the finished vegetables into a colander, drain all excess liquid.
  • Now put the vegetables on a dish, break the potatoes into 2-3 parts, put the rest of the vegetables whole without cutting, sprinkle them with fresh cranberries, dried lemon cut into thin strips on top.
  • We make refueling: mix 3 parts of vegetable (olive) oil, 1 part of lemon juice (vinegar), salt, sugar to taste, mix well until salt and sugar dissolve. Taste and correct the taste of the dressing.
  • gently pour boiled vegetables with dressing, let stand for a few minutes, so that everything is soaked and made friends.

I changed the technology. I put potatoes to cook in MV ("Soup" mode). I put a double boiler with vegetables on top (I used the indicated + cauliflower). After the vegetables were ready, I removed the steamer and covered it to keep warm. I waited for the potatoes to be ready. I peeled the potatoes and added them to the vegetables.
I filled it with a ready-made vinaigrette dressing (oil + vinegar + ready-made mustard + grain mustard - sometimes I make it with a stock and store it in a glass in the refrigerator). Since there was already acid in the dressing, I did not add the berries. And there are no dried lemons. But the chuyka suggested that they were here for a reason))) Therefore, she rubbed the zest of fresh lemon and sprinkled vegetables on it. And, I dare to report, I made the right decision.
The dish is good both warm and chilled, as a solo, as well as a side dish for baked fish.
