Cherry cake

Ingredients

Cakes:
butter 120 g
powdered sugar 35 g
yolks 100 g
proteins 150 g
sugar 100 g
ground poppy 100 g
Almond flour 100 g
ground hazelnuts 50 g
vanilla 1 p.
lime zest (optional) 1 tsp
Cream:
cream 10% 300 ml
sugar 40 g
starch 20 g
yolks 2 pcs.
butter 100 g
meringue crumb (optional) 1 tbsp. l.
Decoration:
Pitted cherries 200 g
Jelly for cakes 1 p.

Cooking method

  • Cakes:
  • 1. Grind poppy seeds, hazelnuts and combine with almond flour. Stir until smooth.
  • 2. Beat 120 g butter with powdered sugar, vanilla and zest until creamy (butter at room temperature). Gradually, add the yolks one at a time without stopping whipping.
  • 3. Beat the whites until soft peaks, gradually add 100 g of sugar. At the end of whipping, the mixture should be smooth and shiny.
  • 4. Combine the whites with the yolk mass and gently stir in the poppy-nut mixture. Put in a mold and bake at 160 degrees until a dry skewer (it takes me about 45 minutes)
  • 5. Cool the finished base on a wire rack and cut into 2 cakes.
  • Cream:
  • 6. Boil the cream, grate the yolks with 40 g of sugar and 20 g of starch, add to the cream and boil until thickened. Cool and beat with 100 g sl. butter and meringue crumbs.
  • 7. Put half of the cream on the first cake, cover with the second and grease with the second half of the cream. Put the cherries on the cream and pour over the cake jelly. I use such
