Ingredients

Biscuit:
Flour 200 g
Sugar 1 tbsp. + 3 tbsp. l.
Eggs 5 pieces.

Low fat cottage cheese. 200 g
Cream 33% 0,5 l
Powdered sugar 150 g
Gelatin 30 g
Water 1/2 tbsp.
Fresh strawberries 300-400 g
Chocolate for decoration

Cooking method

  • Biscuit:
  • Prepare a biscuit, beat eggs and sugar until fluffy, airy, the volume should increase by several times. Then, carefully add the flour, stirring in one side and from bottom to top, add the vanilla. Pour the dough into a mold, bake the sponge cake at 170 ° C.
  • Cut the finished, cooled biscuit into two cakes, and make one cake thinner, this will be the bottom.
  • While the biscuit is cooling, prepare the soufflé.
  • Souffle:
  • Cover the gelatin with water to swell. Dissolve the swollen gelatin in a water bath to cool down by the time the soufflé is cooked.
  • Mash cottage cheese to reduce the fraction of grains and whisk with powdered sugar. In a well-mashed curd, add a thin stream of cream, without stopping whipping.
  • When the curd mixture increases in volume, becomes homogeneous and fluffy, without stopping whipping, introduce the loose, cooled gelatin in a thin stream.
  • Assembly:
  • Cover the mold with cling film, spread part of the strawberries on the bottom in an even layer, a little soufflé on top of the strawberries, and pieces of biscuit on top of the soufflé. On a biscuit-strawberry-souffle and so on, repeat until the end of the biscuit and soufflé. The last layer of soufflé, on which place the bottom. As you stack the biscuit, try to compact the biscuits gently. Place the cake in the freezer for 30 minutes, then in the refrigerator for 1-2 hours.
