Mkhali, or vegetables in a nut sauce

Ingredients

cabbage, beets, eggplant, green tomatoes, green beans 500g
FOR SAUCE
shelled walnuts 1/2 tbsp.
bulb onions 1 bol. Goal.
6% wine or apple cider vinegar 1 tbsp. l.
cockerel greens, cilantro, dill 1/2 bundle
ground red pepper, suneli hops, rast. oil.

Cooking method

  • In nut sauce, you can cook almost any vegetables - spinach, beet tops, leeks, asparagus and more traditional ones: white cabbage and cauliflower, beets, eggplant, green beans, green tomatoes.
  • Prepare vegetables: cabbage, beets, eggplant, green. tomatoes, green beans must be boiled until soft (but not overcooked!), squeezed and chopped with a large knife on a wooden board. There should be pieces, but not in any way pasta. Leave leafy greens and chop too. Beets can be grated on a coarse grater.
  • For nut sauce, chop the nuts (with a meat grinder or blender), pour the garlic, fry the finely chopped onion until slightly golden, chop the herbs finely. Mix everything, salt, add red hot pepper and suneli hops to taste, add vinegar and mix everything well.
  • Season vegetables with nut sauce, mix well, you can decorate with pomegranate seeds and herbs. Serve chilled as a snack.
  • I made green tomatoes in peanut sauce. I cut them into 4 parts, removed the juice with seeds and put them in boiling water for 5-7 minutes. Then everything is according to the recipe.
