Vegetable cake à la ratatouille

Ingredients

eggplant 1 PC.
zucchini 1 PC.
tomato 4-6 pcs.
onion 2 pcs.
bell pepper, yellow 2 pcs.
garlic 3 teeth
parsley, cilantro, dill 5 branches
salt pepper taste
vegetable oil 2 tbsp. l.

Cooking method

  • Cut all vegetables into thin slices. I lightly spray the eggplants with oil from a spray bottle and fry in a dry frying pan. I also fry the rest of the vegetables (except for tomatoes, garlic and herbs) separately in vegetable oil. Then I lay them in layers in a form lined with foil. I add layers, pepper and sprinkle with finely chopped herbs mixed with chopped garlic. Cover with foil on top and put in a hot oven at 180 * for 20 minutes. During this time, all the vegetables will share their flavors, and for the next 20 minutes I remove the foil. Excess moisture will evaporate, the cake will be "baked", and now you need to cool it down, and then keep it in the refrigerator for an hour or two. Flip and decorate as desired.
