  • If we put 10 grams of fresh yeast per 500 grams of flour in the bread dough, why should we add 20 grams of yeast to the dough for buns for the same amount of flour ?!

  • Crumble yeast to the bottom of a bucket of HP, sugar on top, pour in liquid and add 150 grams of flour. Turn on the batch for 1-2 minutes. Turn off HP, add the rest of the flour, salt, add soft butter, cut into pieces. Program "dough" -22 minutes heating, kneading, 1 hour rise.
  • In an hour, the dough grew very well, but did not reach the edge of the bucket. I waited another 30 minutes. Got it!
  • Cut up buns (12 pieces, 75 g each, + / - 1-2 g) as shown in the picture,
  • Butter buns

  • turn over and place on a baking sheet. Let it stand in the oven at t ° 30 ° until doubled. I didn't make any cuts, I just pierced the buns in several places with a toothpick. ;) Sprinkle the rolls with water and bake at 180 ° until golden brown.
  • The dough is gorgeous, very elastic, not sticky at all - I didn't have to grease my hands when cutting. Well, and the smell of ready-made buns ... Butter buns

I always do this with yeast.
My first HP did not heat food before mixing. And this one heats. If so, let the yeast activate during these 22 minutes. Mini dough, so to speak.
