Warm water 345 g
Salt 1.5h l
Wheat flour 340gr
Rye flour 40gr
Wheat bran 150gr
Sugar 1 tsp
Dry yeast 3/4 tsp

  • The water was heated to 37-40 degrees. There was no sugar in the recipe, however, as well as bran, but I took a chance and added. In the process of mixing, I added a little water. It's hard to say how much. She took about 3/4 of a tablespoon, but poured in half. It was a little too much. It could have been a gram less. With the program, I did not get much embarrassment. I took the main recipe from the book for moulinex, and bake bread in my beloved Tefalka. So it turned out that on the machine, with the instructions, I pressed the program with the button-2. In Mulik, there is French bread, and in my tefalk it is quick-baked bread. I discovered this when the bread was already being devoured. But I think that having added sugar to the recipe, it was hardly possible to bake bread in the French mode.

Hello everybody! The birth of this bread in my kitchen was born from a shortage of flour (the prime minister of Ukraine shouts that everything is all right!). You won't find flour Kievmlyn or Belaya Tserkovskaya in the afternoon with fire, but what appears from the Luhansk-Donetsk region (well, you need to support the manufacturer from the Motherland of the "favorite" president) is scattered, and the quality, to put it mildly ... Well, I scrubbed it over the soussek, swept it over the shelves, and it turned out to be on the remains of that a little, and even a little. Having rummaged through the recipe books, I found an "old recipe" based on 1kg, counted it for a loaf of 750g, replaced some of the flour with bran, took a chance and added sugar, and it turned out pretty much nothing! I myself never cease to be surprised. But it has already been tested several times. My husband just fell for him. All week I made toasts from it for breakfasts and smeared it with jam (after the preparations, there are leftovers, and he is our main one for destroying the sweet supply). I ordered it again today. I did it on the same program. Cools down.

I think this is the point here:
The recipe contains:
rye flour - 40 grams
bran - 150 grams (very large amount!)
wheat flour - 340 grams

And such a large amount of bran served as a BREADER of the bread, which can be seen from the cut, the crumb of the bread. The crumbly bread turned out.
Apparently for this reason, there was enough baking time on the fast program.
