Spicy beetroot caviar for the winter From granny


Raw beets 2 Kg
Bulgarian sweet pepper 8-10 pcs.
Large carrots 7 pcs.
Onion 5-6 pcs.
Tomato juice (purchased), you can 1 liter
Tomato paste 3 tbsp. l.
Bitter chili pepper 2 pcs.
Bay leaf 3 pcs.
Black peppercorns 5-7 pcs.
Vinegar 3 tbsp. l. + 1 tsp. for each liter can
Vegetable oil
salt taste

Cooking method

  • Pass the beets through a meat grinder. Transfer the mass to a deep dish with a thick bottom. Simmer with vegetable oil (100g) and 3 tbsp. l. vinegar 30 minutes.
  • Grate carrots on a coarse grater.
  • Dice the onion and bell pepper.
  • Fry all vegetables separately and add to the beets.
  • Pour in tomato juice, add tomato paste, bay leaf, peppercorns. Season with salt and stir.
  • Simmer over low heat for 30 minutes.
  • Grind hot peppers in a blender and add to the caviar 10 minutes before the end of cooking.
  • Arrange hot caviar in sterile jars.
  • Sterilize 0.5L. banks 30 minutes.
  • Add 1 tsp. vinegar in each jar and roll up.
