Rye-wheat bread with Lactin sourdough and cabbage brine (Steba DD1 multicooker)

Ingredients

Rye flour 325
Wheat flour 225
sourdough for bread 0,5
malt concentrate 40g
salt 1.5 tsp.
sugar (honey) 1 tbsp. l.
oil 2 tbsp. l.
liquid (water, serum) 200ml
cabbage pickle 150ml
egg 1
coriander, flaxseed

Cooking method

  • First, knead the liquid (I have whey), all the rye flour, sourdough (I have dry sourdough for Lactin bread), malt concentrate (I have for kvass) and sugar (honey). Leave to rise for 3-4 hours. Then add wheat flour, salt, egg, butter, sauerkraut brine and spices (coriander, flaxseed). I added 2 more drops of "Liquid Smoke" so that the smell was like from an oven. Mix. Put the resulting kolobok in a non-stick bowl (I still put a silicone mat on the bottom). Heating mode 30 * 40-45 min. Moisten the top of the kolobok with water. As it doubles (I have it after 40 minutes), set the "Fry" mode for 25 minutes. Cover "obliquely". After the signal, we take it to the board and again to the bowl for "Frying" for 10 minutes.
  • After the signal, we take it out and put it on the grate. Bon Appetit!

Time for preparing:

3-4h proofing, 40min second proofing, 25 + 10min cooking

Thanks for checking out! I already blushed all over. Mine were swept away in an instant, I had to put it back on. And the smell! 2 drops of liquid smoke works wonders. But I expected more from the sourdough, I thought it would sour on it, because lactic bacteria enter there. But, apparently, for it to sour, you need to wait 3-4 days, feed it, like a real leaven. Maybe more. But the bread did not crack anywhere, which is also a plus.
