1. What height should the sides and curd cream poured into? The fact is that it took me only half of the norm of curd cream to form a 25 cm diameter mold. Made cottage cheese for 500g. The whole norm would just spill over the edges of the form.
2. Have you ever tried adding lemon zest or lemon pulp to this cream? I obviously lacked something sour or maybe even bitterness from the zest.
3. What did you do wrong that after baking the proteins at 200 degrees, a thin film of syrup formed under them?

1. The sides are approximately 5 cm high.
This is not the first time I read that there is a lot of cream. It's a mystery to me. I can't understand anything. All the cream fits into my 26 cm diameter mold.

2. I did not add lemon, but, of course, if you want, you can add a teaspoon of zest to the white cream - the pulp would not add, milk is in the same place, it will curdle more.

3. I have not formed a film under the proteins. I pulled the cake out of the oven and only then began to beat the whites. That is, the cake had time to cool down a little. Perhaps this is the case.

But about the exfoliated syrup ... No, it is more likely not related to temperature. I applied proteins even later. We had dinner, after which I just began to whisk and applied the proteins to the almost cooled crust with cottage cheese cream. I guess I just didn’t beat the squirrels.

Today I tried to bake this cake, though I got it as a cheesecake)) because I slightly altered the recipe for the products I have. This is something mega tasty !!!
I did the dough, did not change anything, but for the filling I did not have pudding and therefore did not add milk - I was afraid that it would be very liquid. Did this: cottage cheese - 300g + 150g sour cream + 2 tbsp. l. decoys + 1 tbsp. l. starch (I have corn) + 1 egg + 5 tbsp. l. sugar + vanilla sugar. kneaded until smooth, divided into 2 parts, added cocoa and a little sour cream to one. I laid out the filling because it is thick like this: in the center - brown, in a circle - white, then again brown and white.
It baked for a long time, about an hour, first at 170-180, then at 160 degrees (the last 20 minutes).
