Ingredients

Wheat flour (high quality Shadrinskaya) 450 g
Peeled rye flour 120 g
Wheat bran 30 g
Salt 2 tsp
Sugar 3/4 Art. l.
Vegetable oil 2 tbsp. l.
Warm water 400 ml
Yeast Saf-moment 2 tsp

Cooking method

  • All ingredients are consistently put into the form. Yeast into the dispenser. Usually, after placing the ingredients, I knead the dough in the mold using a silicone spatula, then I put the mold in the oven and turn on program 01, set the crust color (in this particular case, medium) and the size of the loaf - XL. In the process of kneading, I follow the formation of the bun and help to collect dry ingredients with a silicone spatula. At the end of the batch, I level the bun with warm, damp hands, crushing it slightly.
  • Number of ingredients for other sizes, respectively:
  • L - 375 g; 100 g; 25 g; 1.5 tsp; 0.5 tsp; 1.5 tbsp. l .; 340 ml; 1.5 tsp.
  • M -300 g; 80 g; 20 g; 1 tsp; 0.75 tsp; 1 tbsp. l .; 280 ml; 1 tsp

Thanks for the recipe! I rarely get it with rye flour (I don't like bread), but this is a good recipe. Baked according to the standard size "M", ie wheat 300 gr. True, I forgot that I was going to bake in the HP, out of habit I kneaded the dough in the HP and baked it in the oven. I left the recipe for myself. But I will halve it so that I have less bread: it’s better to bake fresh then ... I don’t know HOW to leave gratitude to the author (where should I press?) - sorry!

I forgot to ask - this bread recipe is not in the instructions for the Panasonic SD-ZB2502. Are you adapting any recipes for HP? Have you tried that recipe for bran bread that is in the instructions? I have it marked there that water is not needed 430 ml - I don't know where I got it from ...

Yes, I am experimenting with ingredients, because flour is different and different fillers. I try to reduce the amount of gluten, so I add bran (various), other types of flour (rye, buckwheat, amaranth, oatmeal, rice, nut flour).
I tried all the recipes for our HP. I didn't like everything, because I like rye bread.

I would also like to have more rye recipes. So far I have only adopted yours, others have not yet liked it. And the one that is in the instructions for our HP, do you like it worse than the one that is placed above? And yet - WHERE to find your recipes on this site? I am very poorly guided here.

Also for myself, I slightly changed the recipe for Viennese bread - I wrote in the subject.

And I prefer to bake pure rye bread (100% rye flour) with everlasting sourdough in the oven. I found a recipe on the Internet and again adapted it for myself)))
