It is easier to add additives in the form of milk, cream, water to such low temperature minced meat. It is at low temperatures that meat protein binds liquids, which give minced meat products juiciness. when there is, I like to add celery stalks to the minced meat. But stalks of stalk celery (no more than 2 stalks at a time), I always grind only frozen glass-transparent-ringing ones, so they are ground into dust and give a very interesting aftertaste note to minced meat dishes.
