Ingredients

Flour 3 hours
Water 1 hour
Salt 1 tsp
Sakh. powder 1 tbsp. l.
Butter 4 tbsp. l.
Dry yeast 1 1/2 tsp

Cooking method

  • Divide the dough prepared in a bread machine into 8 parts. Roll each into a 23 cm long sausage with pointed ends and mold the bagels. Place on an oiled baking sheet, cover and leave for 20 minutes.
  • Boil water in a large saucepan, add 25 g of powdered sugar. Cook each bagel for 1 minute, turning with a slotted spoon. Remove, shake off the water, put on a baking sheet. Lubricate with yolk, whipped with a spoonful. You can sprinkle with poppy seeds or sesame seeds.
  • Furnace 15-20 min. at 200 *.
  • Cut lengthwise, spread the bottom half with a mixture of whipped cream and soft cottage cheese, sprinkle with herbs, slices of ham and cover with the top half.
  • Bagels

Sorry, but what does pre-cooking bagels give? What does it look like? How big should the saucepan be? How many liters? And another question is one cup in your recipe - how much is in ml?

I cannot comment on what exactly cooking gives, because I took the original recipe from the Smellwood book, without any improvisation. But I know that Russian bagels are also scalded before baking in the oven. Recently, a link to industrial recipes for Ukrainian bagels was posted here on the forum.

I think, what a large saucepan is, you can take one. It will become clear to you when the bagels are fashioned and fit, what diameter they are and how much water to take so that they completely fit in the pan. If there is no large one, you can scald one piece at a time.

As far as I understood, Smellwood did everything in Morphy Richards, there seems to be a measuring cup of 200 or 210 ml. But I did 253 in Panasonic, I, like you, have a measuring cup 240 - everything worked out great

We make the hole in the middle ourselves, twisting the sausage into a ring, then this hole remains during proofing. When scalded, bagels do not swell as much as custard when baking ...

How much is 3 cups of flour in grams? And if I understood correctly, you need 240 ml. water. Right?

Actually, here on the site there is a conversion of volumes in grams. 1 cup from Panasonic-253 is 240 ml, it contains 150 grams of sifted wheat flour. Accordingly, three cups - 450 grams.
