Although today, to put it mildly, it is not at all hot here)), but I have been making this kvass for a month already. And okroshka on it too)
Since it's not hot, I don't put in a large amount, I adapted to make 3 liters each: I pour a quarter of a three-liter can of juice (by eye), add coffee, 3 tablespoons of sugar with a slide and sourdough from the previous batch. I made it with yeast only once, and then I looked - the leaven is good, it bubbles so that it inflates like a ball overnight, with which I close the jar (by the way, it is very convenient - nothing flows out and holds well). And in the morning I collect a half-liter foam from above in a jar, in the evening I add it to a jar in which there was kvass - there is still sourdough at the bottom. For a month, nothing happened to her - I did it this afternoon, quickly drank the previous one, had to be unscheduled.
And all the time I remember you and say thank you). We are already making juice based on this kvass.

No, it’s on the stove)) At normal room temperature, it doesn’t have time to deteriorate, although it’s cool now, only the second day it became hotter. If it's hot at home, then in the refrigerator, probably, if not more than 20 degrees in the kitchen, then at room temperature.
I just put a new batch again)
The recipe is just awesome. I tried others, with chicory without juice - but I did it last year, I didn't like it - after all, apple juice gives a very pleasant taste.
