Cake Ring with Nuts (Kengis R.P., 1958)

Ingredients

flour 4160gr + for submerging 310gr
sugar 1540gr
butter (original - butter margarine) 2310gr
melange (eggs) 540gr
salt 15gr
baking powder (original soda + ammonium 4gr + 4gr) 7 tsp(for 416 g of flour - 2/3 tsp. l.)
vanilla sugar
nuts for decoration 735gr
eggs for lubrication 200gr

Cooking method

  • This is the original recipe unchanged. 100pcs should come out of it. 80g each.
  • I divided the recipe exactly 10 times and baked it for 416g of flour. There were 12 pieces.
  • 1. Beat butter a little and add everything to it except flour (and nuts with an egg for lubrication, of course))), knead. Add flour and mix quickly (2-3 minutes). Shortcrust pastry is not subject to long kneading. Wrap in plastic and refrigerate for now.
  • 2. About eggs. If the recipe is reduced by 10 times, we need 54gr + 20g = 74g. Take a couple of C1 or C2 eggs, beat with a fork and pour into the dough, leaving about a quarter to grease. Add a teaspoon of water there. This will make it easier to lubricate - the egg becomes more liquid and non-stretching.
  • 3. To grind the nuts (not to grind into dust, but to grind them, I crushed them in a marble mortar). About nuts. Roasted nuts are suggested everywhere. But when baking in the oven, the temperature is hell (shortbread dough is usually baked at a high temperature) and the nuts are fried and tinted. The photo shows it. In my opinion, the fried ones will simply burn. I take raw.
  • 4. Roll out the dough into a layer 7-8mm thick (when working, you need to dust the table a little with flour so that it does not stick), cut out the round cakes with a round notch of 8-9cm and remove the middle from them with a round cut of 2 cm. Brush with egg, sprinkle with nuts. Resist the temptation to roll very thinly. The edges of such rings will instantly burn. The thickness that Kengis gave is actually perfect.
  • 5. Bake for about 10 minutes at 210g with convection. The original recipe says 250-280g (traditional oven). They tint and burn very quickly, so do not be distracted.

Again, with a rolling pin, we drove with a slight pressure, turned over and covered with dust. You don't need to roll the whole dough at once. In pieces, so that it is enough to cut 2-3 rings. Leftovers in a lump, add a freshly cut piece of dough to it (the rest lies in the refrigerator and awaits its "fate") and everything is new: rolled out, cut out 2-3 rings, collected the leftovers and added a new piece of cold dough. Everything will turn out great!
