I take 150 ml from the jar for my bread. Then I put sugar, add water, a couple of three berries and leave them in the kitchen, after a day or two, when they start to foam, I put them in the refrigerator (just for a day), then again they need to be removed, heated, baked. So, there was a feeling that the yeast did not have time to recover, the bread began to rise much longer. Maybe two or three days let them stand, not a day. But then the refrigerator is not needed, it turns out that in 2-3 days I bake the next bread already. How to be, start another can to drive in turn. or you don't have to put it in the refrigerator, and this jar will be in the kitchen like a perpetual motion machine all the time. )))
And the second question, possibly related to this. Then you can feed with sugar and refrigerate. You can have several railway drives and use them in turn. Personally, I do not like the railway from the refrigerator and a bunch of jars in the kitchen. So I try to slow down the fermentation a little. When I take a railway for bread, I do not top up to the original level, but part of the water and put a teaspoon of sugar, after 2 more days. For example, you take 150 ml. Railway for bread. Remove some of the raw materials from the jar, put in some fresh, add 75 ml of water and 1 tsp. sugar, after 2 days add another 75 ml of water and 1 tsp. sugar. (Water can be poured approximately, not necessarily exactly 75 ml). It turns out that by the time of baking, there are enough railway drives and they are extremely active. The main principle is that yeast should not starve.
