Dark dough:
flour (sifted) 280 g
soda 1 tsp
cinnamon 1 tsp
grated nutmeg 1/2 tsp
ground ginger 1/2 tsp
salt 1/4 tsp
cocoa powder (bitter) 1 tbsp. l.
instant coffee or espresso (powder, NOT granular!) 1 tsp
butter 113 g
Brown sugar 225 g
yolks (the whites will be used in the light dough) 4 things
syrup 180 g
natural yoghurt 250 g
Light dough:
flour (sifted) 350 g
baking powder 2 tsp
salt 1/4 tsp
butter 113 g
vanilla extract 1 tsp
almond extract 1/4 tsp
sugar 225 g
milk 180 ml
whites (yolks will be used in dark dough) 4 things

Cooking method

  • Oven: 175 degrees. Place the wire rack in the lower third so that the baking dish is in the middle.
  • The form:
  • The recipe is for a large pipe pan (about 3.4 liters = 14 cups) - I baked in the Anniversary Bundt Pan from Nordic Ware.
  • Prepare the form as usual - grease with oil and sprinkle with ground breadcrumbs.
  • Dark dough:
  • 1. Stir and sift flour, baking soda, cinnamon, nutmeg, ginger, salt, cocoa powder and coffee. Set aside the mixture.
  • 2. In a large bowl, beat the butter with a mixer (until completely soft). Add sugar and beat well again. Then add the yolks (all at once) and molasses. Beat everything until the mass becomes smooth and lighter.
  • 3. At a slow mixer speed, add alternately dry ingredients (3 divided doses) and yogurt (2 divided doses). Stir until the mixture is smooth and smooth.
  • 4. Set the dough aside or transfer the dough to another bowl, if this bowl (from the mixer) is needed for making light dough.
  • Light dough:
  • 1. Stir and sieve flour, baking powder and salt. Set aside the mixture.
  • 2. In a large bowl, beat the butter with a mixer (until completely soft). Add both extracts and ¾ sugar (1/4 will be needed later for whipping the whites). Whisk until well mixed.
  • 3. At a slow mixer speed, add alternately dry ingredients (3 divided doses) and milk (2 divided doses). Stir until the mixture is smooth and smooth. Set the dough aside.
  • 4. In a separate bowl, beat the whites until soft peaks, reduce the mixer speed slightly and gradually add the rest of the sugar. Beat until the protein mass is quite dense.
  • 5. Gently add the proteins in 3 steps to the light dough (by folding), but you do not need to mix the proteins to the end, that is, proteins will be visible here and there in the dough. The main thing is that all this is distributed evenly throughout the test.
  • Filling out the form:
  • Prepare 2 large spoons. Start with a dark dough: spoon 4-5 large "blots" (evenly in a circle) on the bottom. There should be a free space between the "blots", which we fill with a light dough. We fill the next row in a checkerboard pattern - on the dark dough we flop a light spoon, on the dark one - respectively light. Continue until the dough runs out.

  • Gently, but quickly rotate the shape left and right a couple of times so that there are no empty spaces.
  • Bake in the oven for about an hour (until a dry torch), then remove from the oven and let cool for 10 minutes, then cover with a suitable dish and gently turn over. Allow to cool completely.

Note

My replacements in the recipe:

Dark dough:
- There was a temporary stress in the house with yogurt, so I replaced it with a mixture of yogurt and kefir (since there was not enough yogurt either :-))
- I don't have instant coffee, but I have regular coffee. Therefore, I brewed a strong espresso (60 ml) and added it to the milk mixture. Thus, coffee was added not as a dry mixture, but together with liquids.
- I used light floral honey instead of molasses.

Light dough:
There were no such extracts in the house either. therefore
- replaced vanilla extract by 0.5 tsp. ground vanilla
- almond extract - for 1 tsp. amaretto (almond liqueur).
I guess / hope all these replacements did not affect the taste. And it turned out very tasty, aromatic and harmonious. Big beautiful cupcake for a big company
