Nastya, just in case, opened the book again and reread it from the authors again - there is no need to give the pits a proofing, just before baking, get a piece of dough from the refrigerator, roll it out, and throw it on a baking stone. Only I roll out thicker, with 1 cm thick, and not 5 mm, as they recommend.
Basically, you can give the dough 10 minutes to relax after rolling, and then immediately bake.

So I think I think - we take dry ones as written in the recipe and into their flour or into water. Maybe someone else has some experience with yeast of other brands (more / less, etc.), otherwise I'm afraid to change the yeast, suddenly it won't work with new ones.

Girls, I didn’t get pita again .... Simply unrealistically delicious cakes. And no pockets! When I defended it (I showed it above in the topic today), it turned out a round cake without cavities. But they are insanely delicious! What difference does it make what kind of them I get, if only it was delicious. So I will continue. The dough has settled in the refrigerator for a long time.
