I will slightly supplement the instructions for entering the service mode of the Panasonic SD-2501 stove:

1. Press the "Stop" button and remove the plug from the socket.
2. Simultaneously press three buttons: "Menu", "Crust color", "Start". While holding down all three buttons - connect the plug to the socket.
All symbols should light up on the display - this means that the service mode has started.
Release the buttons.
3. Press the "Size" button - the HP will emit several squeaks and begin, briefly, with pauses, to turn on the heating and maintain the temperature of 35 degrees in the HP bowl. ... The display will show one small symbol - "mains plug".

4. We observe how the dough rises in the HP bucket and when the dough has reached the condition, turn off the service mode. To do this, press the "Stop" button 2 times until the program number appears on the display.
After that, HP is in "normal mode" and you can select the desired program.

They apparently do not know about it. I have been using it almost daily for five years, everything is fine.

Amasar, Andrei,
carel2, curious, what does taking out-plugging into an outlet give? ..
Everything works fine without it.
Newbie, I have already forgotten how many years I have been using it, nothing is done with yeast at that temperature. Every time I say thanks to Andrey, who noticed this and introduced us!

Heat ? What is your normal temperature? And in the stove - 35 degrees. Even below yours. For lifting yeast - comfort, however.

This is if the stove was connected to the network. The fact is that when the stove is on, it is impossible to turn on the service mode. (All symbols do not light up, etc.) But when it is off - press three buttons and turn it on - everything is OK.

optimal T for raising yeast - 26-28

optimal T for raising yeast - 26-28
That is, in your opinion, higher than 28 ° C is impossible? Where did you get this from? If that's your opinion, keep it to yourself.
Let's take a look at the yeast producers, Le Saffre, for example, which I, like most people here, use. The first recipe from the list from the yeast manufacturer's website:
Baguette "French" 🔗:
... Final proofing
80-90 min / 30 ° С ...
Next - Ukrainian Pampushki: 🔗:
... Final proofing
50-60 min / 32-35 ° С, W = 75% ...

Working with dry (and wet similarly) yeast 🔗:
"It is possible to pre-dissolve Saf-Instant® dry instant yeast with a red label in warm water (35-38 ° C) with a short mixing."
That is, if you need to do it quickly, then the temperature should be 35-38 ° C, at which the yeast has maximum growth.

35 deg. - it will not be worse. The best lifting force of yeast is observed at temperatures close to 30 ° C.

The most intense alcoholic fermentation takes place at a temperature of + 35 ° C.
An increase in temperature from + 35 ° C to + 40 ° C is accompanied by a rapid increase in the acidity of the dough, since this temperature range is favorable for the development of acid-forming bacteria. Yeast activity in the indicated temperature range is still very intense. So -35 will only increase the rate of rise of the dough.

Exactly! An increase in the temperature of the dough to 35 ° C enhances the action of amylolytic and proteolytic enzymes, increases the degree of disaggregation of starch and protein substances, increases the rate of swelling and peptization of flour colloids.
However, it is recommended to increase the temperature of the dough to 35 ° C when cooking it FROM STRONG FLOUR or in accelerated methods.

Yes? ... I never thought about it ... I just pressed "stop" and then entered the Service mode. Always. From any "inactive" program listed on the scoreboard.

This is a regular mode, nothing will happen. I have been using it a lot lately, because steamed bread usually takes longer than HP programs can give. Therefore, after the kneading, I turn off the program, turn on the service mode and leave it. As the dough goes well, I turn on the baked goods. In fact, we can say that Panasonic 2500-2502 and 2510-2512 have one more program - warm proofing of dough

Tatyanaand good luck to you!
Hello . Can you please tell me, does the Panasonic SD-ZP2000 KTS also have the ability to use the service mode and do you need to press the same buttons or others? I don’t know yet which model is better to buy, the store did not know about the service mode.

Svetlana2020, here they say that there is:
https://Mcooker-enn.tomathouse.com/in...444.0
You will chat there in the subject with people who already have such.

Hello! In my stove, the ZB - 2502 keeps the temperature at 38.4 in service mode. The error relative to the medical thermometer is plus 0.5 degrees. This means the temperature in the bowl is about 37.9.
