Decide for yourself what to do. The disaster will not happen if you ferment for 24 hours. Here's the truth. To understand what is best for you, you need to try to make different options. I have made both 3-hour and 24-hour teas. And fermented for 48 hours. I still can't decide which is better. Therefore, I will not advise. Try it.
