Pea soup in our pressure cooker

Ingredients

Beef meat 300-350 grams
The water is clean (cold) 1.5-2 liters
Split peas yellow 1 glass (250 ml.)
Cooked-smoked brisket, ribs 3-4 pcs.
Fresh potatoes 3-4 pcs. taste
Dried vegetable mix pinch
Fresh parsley (dried) 1-2 tbsp. l.
For frying:
Bulb onions 1 PC. taste
Fresh carrots 1 PC. taste
Sweet pepper slice to taste
Cherry tomatoes red 8-10 pcs. cut in half
Vegetable oil 1 tbsp. l.

Cooking method

  • This time I decided to deceive myself and cook the peas in two steps, because I don’t like completely boiled peas in the soup. And at the same time I realized how good it is to have two pots in one multicooker))
  • I put on to cook the meat broth. I put meat, a mixture of dried vegetables, salt, water in a saucepan, close the lid and expose BOIL mode, pressure 3, time 40 minutes by default, and bring the broth to readiness. During this time, the meat was cooked, but not boiled, it was a little dense - this is what is needed for re-cooking the broth.
  • In order not to overflow the broth, I put a second pan in the base of the pressure cooker, turn on BAKING mode, and I do the frying-sautéing of vegetables: I cut the boiled-smoked brisket (a little and only for a light taste and smoked smell), I cut onions, carrots, cherry tomatoes, sweet peppers, spices. Pass for several minutes until the liquid evaporates. I turn off the pressure cooker.
  • Why do I sauté vegetables for soups?
  • Carrots, beets, onions, sweet peppers, parsley root, celery, tomatoes are best added to soups browned, so they are tastier. The coloring matter - carotene, which is converted into vitamin A in the human body, is poorly absorbed when raw carrots are consumed. When browning, the digestibility of carotene, which has passed into fat, increases significantly; in addition, the fat, turning orange, yellow or red, gives the soups a beautiful color.
  • Spices give soups a special taste, stimulate taste buds, promote the secretion of gastric juice and digestive enzymes.
  • Now I add raw peas to the sautéed vegetables (I do not pre-soak in water), potatoes in cubes, pour over the finished broth (I cut the boiled meat in portions), parsley, salt to taste. I close the lid and expose BOIL mode pressure 3, time 20 minutes and bring the soup to readiness.
  • The meat was already ready, cooked, so 20 minutes of time would be enough for the raw peas to cook, but not completely boiled, but remained partially boiled, partially whole.
  • I pour the finished pea soup into plates and serve it hot!

Usually, I regulate the thickness of soups not with products in the broth, but vice versa: when all the ingredients are in place, I add as much water or ready-made broth to get the desired thickness of the soup. It's easier than scooping up excess liquid or filling with potatoes when the soup is ready.

We had a great dinner! And my husband has smoked meats in a bite ... Also not bad :-))) Only 20 minutes was not enough for me to boil the peas and be soft. I added another 10 minutes, that is, the peas were cooked in total for 30 minutes. At the same time, the potatoes are not boiled, they are whole and neat. Supets AROMATIC! NICE! And fast! Children wake up early ... But usually I had time to cook soups right in time for dinner. And here already at 10 am the aroma of ready-made soup was poured through the kitchen. Thank you! The younger one especially liked it :-))




Yes, I didn't soak the peas ... I probably had it super dry. If I soaked it for a couple of hours, maybe 20 minutes would be enough.

Only from the store came with a pressure cooker and immediately pea soup! I have a slightly different sequence: I fried onions, carrots, pepper lightly on the "baking" mode. Even on the "baking" mode, threw the backs of the chicken (the husband loves them), lightly fried it. I threw in potatoes, peas and poured water over it, it began to boil - I changed it to the "cook" mode, waiting for the pressure to drop. I just forgot to add salt!




In vain I set the full regime, everything was boiled, but I love it so much. 10-15 minutes would be enough. All the same, they ate everything, and even praised it!

I usually cook pea soup differently and without frying vegetables. Tomatoes and bell peppers have never been used in peas. But looking at Romin's soup, such a beautiful and appetizing one, I wanted to cook that way.
