Ingredients

Dough number 1:
Whole grain wheat flour 75g.
Water 45g.
Fresh yeast (dry) 0.5g. (pinch)
Dough No. 2:
Whole grain wheat flour 100g.
Semolina 100g.
Water 200g.
Fresh yeast (dry) 2d. (1 \ 5h. L.)
Dough:
Dough No. 1
Dough No. 2
Wheat flour (I have 1c.) 225g.
Water 100g.
Fresh yeast (dry) 5d. (2d.)
Salt 15g.
Sesame 30g.

Cooking method

  • Prepare dough number 1. Mix everything, you should get a dense dough:

  • Leave the dough in a bowl, close tightly and leave at room temperature for fermentation for 10-14 hours.
  • Prepare dough number 2. Mix everything, you should get a dough as thick as porridge:

  • Cover and leave at room temperature to ferment for 10-14 hours.
  • After 11 hours, the doughs looked like this:

  • For the final test, grind the yeast with flour into crumbs by hand. Then add all the ingredients and mix in a food processor according to the following scheme:
  • 1 speed - 2 minutes.
  • 2nd speed - 8 minutes.
  • The dough is elastic, slightly sticky to the hands, with well-developed gluten:

  • Put the dough on the table (if necessary, dust it with flour a little), knead and fold 4 times:

  • Transfer the dough to a lightly oiled bowl, cover and leave for 1.5 hours at room temperature to rise, fold the dough every 30 minutes (stretch and fold). Do not pay attention to the consistency of the dough in the video, in this recipe it is completely different, the video is given specifically for the folding sample.

  • Place the ring on baking paper, cover and leave to rise for 1 hour.
  • Preheat the oven together with a baking sheet or baking stone to 250C.
  • Before baking, make shallow cuts on the workpiece, sprinkle with plenty of water:

  • Bake for 10 minutes at 250C, then lower the temperature to 200C and bake until tender for about 25 minutes. Ready bread, when tapped on the bottom, emits a dull sound.
  • Cool the finished bread on a wire rack.

I think Mistletoe I called it that way, not because it contains ingredients dangerous for the figure, but because it is difficult to stop devouring it
And in terms of composition, the bread is very dietary (as for wheat) - neither butter for you, nor sugar, the flour is correct; so I add it to my first priority)

I only remembered that sesame seeds are 30 grams
I put 10 grams of salt, 200 flour, 100 water. I decided not to put in the yeast (the doughs were very riotous). In the process of kneading, I added a little flour. In general, everything is almost prescription. )
But the crumb suited me more than completely, so I didn't have to regret the forgotten yeast.

Therefore, there are two options - more salt and more yeast (author's recipe), or less salt and less yeast (my option).
