I liked the simits, they turned out great - if you grease with egg yolk. I asked my sister to bring pecmez from Turkey ... and the bagels were covered with wrinkles, the dough even seemed to have settled (covered with pekmez, after proofing - just before being sent to the oven) ... it turned out ugly. Maybe it's not about the pekmez? Anyone baked with pekmez?

Made these bagels today. Delicious, but I didn't get crispy, it seems that there was not enough proofing, could have been more magnificent. Now I have put the other half to proof. And another question: how does anyone manage to roll the blanks? I roll them out, and they shrink back like rubber bands.

The second batch turned out to be much better, it lasted about 1.5 hours. Lush, it tasted like a donut. One disappointment - the products are like one loaf of bread, but they ate it instantly. .. It is impossible to resist!

milka80, Why not? I used the dry ones, we still have to run after the wet ones. Yes, and oil, I think, can be easily replaced, or with a mixture of creamy and odorless vegetable.

milka80as usual with bread in your bread maker. I always pre-dilute yeast in parts of the liquid. All products, except for oil, are put in a bucket, I turn on Pizza or Pelmeni, after active mixing, when the bun has already gathered, I add oil and a little remaining flour (I don’t put all of it at once, I leave 80 grams for adjustments). Another five minutes to interfere and that's it. Let it stand as per the recipe. I then put half of the dough in the refrigerator for 4 hours, then cut it up, stood on the proofer for 1.5 hours - I really liked it. It turned out like a classic donut.

It's a pity the author doesn't appear anymore, but the bagels are great for this recipe. I just replaced the margarine with butter and did not introduce it immediately, but half an hour after the first proofing. Very pleasant dough to work with, bread crumb, not dense at all.
