Eggplant anointed "Ogonyok"

Ingredients

Eggplant 500 gram
garlic 5 slices
lemon juice half a lemon
olive oil 4 tbsp. l.
peppercorns 7 pcs.
caraway 0.5 tsp
sweet drying paprika 1 tsp
coriander seeds 7 pcs.
sea ​​salt good pinch
Brown sugar good pinch

Cooking method

  • Wash the eggplants, dry, wrap each one tightly in foil, shiny side to the skin. Bake in an oven preheated to 200 degrees for 40 minutes (until tender).
  • Cool slightly and peel off. Cut into pieces, fold into a porcelain bowl, add marinade. Mix gently. Close the container with a lid and refrigerate (ready in 4 hours, and the taste is best manifested in 12 hours).
  • Marinade: in a preheated clean frying pan, heat sugar, pepper, caraway seeds, paprika and coriander until "revitalized". Transfer immediately to a wooden mortar, grind well, add salt, lemon juice, garlic and grind again. Add OM, mix.

Note

In this marinade "blue" ones show all the richness of their taste.
The main thing is to have time to grab a hot piece of bread from the toiler-Panasik!
Simplification of the marinade is possible; the taste, of course, changes, but not “critical”.
