For 1 medium loaf:

225 ml. water in which the potatoes were boiled

3 tbsp. l. sunflower oil

500 gr. wheat flour

175 g dry mashed potatoes

1.5 tbsp. l. milk powder

1.5 tsp. salt

2 tsp Sahara

1.5 tsp. yeast

For 1 large loaf:

330 ml. water in which the potatoes were boiled

4 tbsp. l. sunflower oil

675 gr. wheat flour

225 gr. dry mashed potatoes

2 tbsp. l. milk powder

2 tsp salt

1 tbsp. l. Sahara

1.5 tsp. yeast

"Golden" crust, "Basic" mode. Brush with milk before baking.
I was baking a large loaf. Its weight after baking and cooling for an hour is 1kg. 170gr.

Everyone at home really liked the potato bread. Turned out high and

airy. Before baking, I did not grease with milk, because I was absent at that time

but the crust is already well browned (though after baking bread

she left for another 30 minutes in cotton).

And more ... To get dry mashed potatoes, you need to crush boiled

potatoes without liquid and oil, and let cool to room temperature.

Crochet, the bread is GREAT !!!
I often bake it - airy and high, while "heavy", that is, solid and satisfying with a subtle smell of potatoes.
I put in 1 cup (250 ml) mashed potatoes.
Just do not load all the flour at once, otherwise it will seem that it is too dry and you will want to add some water - the potatoes like to absorb the flour gradually.

Two days have already passed, and our giant bread (half a loaf remained) is still as soft and airy as on the first day. And the most important thing is that it doesn't crumble. For some reason, for some reason, almost all the breads crumble all the time (I've already tried different flours).
And potato bread is very elastic and snow-white. In general, I am very pleased with the bread, and my husband appreciated it. Thanks to Crochet for the recipe!

Crochet, "Basic" mode - how long is it? In my stove it is 2 hours 50 minutes for 900 g. And if it is not difficult, then you could not paint the schedule in time: how much for kneading, how much for raising, etc. I will compare with my modes and choose the most suitable one, otherwise The recipes given on the forum used to keep the bread a little raw inside, so it was necessary to bake.
Crochet
Yuliko, "Basic" mode, this is 3h 20m - for 1 kg. loaf.

Crochet, baked such a medium loaf - it turned out just super!
Very fluffy, rose much higher than the bucket (if I loaded a large portion, it would generally fall out)). When cooled down - 900 gr. (and baked on the 750 program)
The gingerbread man was tight, but it absorbed all the flour.
I smeared the top with milk, but to no avail - during the baking process, the bread began to grow so much that the roof tore
the husband cuddles and praises
Crochet
insha , it was my first bread with potatoes, also a complete delight! And you potato bread from Admin have you seen? If not, then be sure to check it out ... I highly recommend ... there is such a variety, these very potatoes !!!

I really like to bake bread from potato dough, I added mashed potatoes not dry, but simple, from a saucepan. The test turned out to be a lot, as it rose a lot. so I baked bread in a bread maker, and made a roll from the remaining dough. inside this ringlet is puree with dill. unfortunately there is no cutaway photo, we ate the pie hot.

This bread does not stale and does not lose its properties even on the 3rd day.
Such soft and fluffy bread has never been possible before. Recently, they switched mainly to this bread. He is especially liked by children and the female half of the family. A very simple recipe.

Bread maker Moulinex OW 5004.
All baking parameters are default. (program no. 1,
bread weight - 1000 g, medium crust, time 3 hours 20 minutes)

Water - 250 g
Vegetable oil - 30 g
Salt - 2 tsp
Sugar - 2 tsp
Boiled potatoes in their uniforms, peeled (mashed potatoes) - 250 g
Wheat flour - 500 g
Dry fast-acting yeast SAF-Moment - 0.75 tsp. (if others are fast-acting, then 1 tsp.)

For 1 large loaf:

And here is my potato bread. I made the norm for a large loaf, when the dough was kneading, it was very tight, and then it began to liquefy when it was lifted, but it was too late to add flour ... And here's the result - The roof fell off, and the crumb turned out to be large, and it crumbles very much, probably there was a little flour to pour during kneading, and went up to the very roof. I could not resist - I cut off a hot crust with tea, it tasted like pies with potatoes.

Replacing milk powder with regular https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=153.0, yes, just dilute a little milk powder in hot water and let it cool, you can boil it. Read the preparation method on the milk powder packaging

tell me, how can you replace potato flakes for bread? I just didn’t find them on sale, so I think maybe you can use instant potatoes ... otherwise the taste of it, in principle, was not felt

Flakes can be replaced with simple boiled potatoes, mashed potatoes.
It should be noted that in this case it is necessary to reduce the amount of liquid, since there is enough of it in boiled potatoes.
And be sure to adjust the flour / liquid balance.
seal
you did not understand me ..... everything is clear with potatoes, and I did it. but there is no taste of potatoes at all, although I added sooo much. regular bread tastes.
that's why I'm asking how you can replace potato flakes, except for real potatoes.

If only with chemical additives with potato flavor

Potatoes are potatoes - they have a neutral taste, and they are added to bread dough to achieve a dough quality that becomes fluffy, tall, and perforated.

What answer do you want to find? Do potatoes have a pronounced smell? The smell is neutral, almost none, like an orange.

But in the finished bread, when the bread is baked, high, with holes and so on, ruddy - there is the aroma of QUALITY bread! And these qualities and structure of bread are given by potatoes.

I may not be convincing, but everyone has their own tastes and smells
seal
Well, maybe you tried potato bread at the intersection store, they bake themselves. here you can feel the potatoes in it.
I just want the taste of potatoes in bread)))

That was the situation I had - I really liked the bread in Spara, I went to look for a chef who bakes bread.
I asked him for a long time to give him a recipe for bread, at least some proportions - she did not wait ... he refused to give, referring to a secret and so on ...

This fact says a lot ... it means there is something to hide from buyers ... it means there are additives, taste improvers, the same potatoes, for example

But for me ... better bread just smells like good homemade bread
Crust
Seal, if you decide to experiment, try using raw grated potatoes, only it gives a lot of water, that is, you need to reduce the liquid. I did it, but not according to this recipe. It smells awesome like potatoes. Although the flavor may depend on the quality of the potatoes themselves, sometimes they sell such nonsense that just boiled potatoes hardly smell.
seal
yes, the fact of the matter is that I know the composition ... and there are these potato flakes that cannot be found (((

You see how! Another opinion!

And I didn't like raw potatoes in bread, on the contrary, it smells of dampness. But this is my opinion, my taste problems

Look for cereals in the cereals and cereals section, they are sold in bags or boxes. Or instant potatoes, instant cooking, this is the same thing in essence - both need to be poured with boiling water and allowed to swell.
seal
damn ... I can't quote ...

yes, the main thing for me is not the smell, but the taste))))

voooot, Admin, urrah)) you answered my question))) then you can add a homeless puree))))
Crust
Well dyc, take grated potatoes, squeeze them out well, get potato almost flakes and potato juice, which can replace water in the recipe.

And I didn't like raw potatoes in bread, on the contrary, it smells of dampness. But this is my opinion, my taste problems

Well, yes, I got it more moist, but I would call it not raw, but juicy.

I can't keep up with you, while I was writing, two more answers
seal
this option is more crap))))))
here open and pour it yeah)

Yesterday I made dumplings with potatoes and there was a bit of mashed potatoes left, I decided to try your bread. Full delight - soft, airy, with a delicate smell of potatoes In general, delight is complete, thank you very much for the recipe

And if you put mashed potatoes (250 grams - as others wrote), then how much (at least approximately) you need to reduce the water?

Nobody will tell you this specifically, because it is not known how much milk you added to your puree. We'll have to follow the kolobok.

Thanks for the recipe. While the bread was baking, the smell all over the house mmmm Now an excellent loaf is cooling down.

I still have mashed potatoes, but somehow I made bread on mashed potatoes, but "by the poke method." This time I decided to look at the recipes. I took this recipe as a basis, but potatoes. mashed potatoes put 200g and semolina 15g, yeast 1 tsp. The puree was cold from the refrigerator, water at room temperature. The bread came out large and fluffy. The main program.

The day before yesterday I was inspired by Jeanne's recipe for bread, which I have baked more than once https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=455679.0 Surprisingly, the bread was eaten in 1 day. Today I baked it on whey.

Tell me, does mashed potatoes go as an additive? I always bake great bread. there were 3 potatoes left, I put ... and no, to reduce the water, reduce the flour, the bread was baked, but flattened a little. Now I think, if you put potatoes, just reduce the water? do not touch the flour? add according to the main recipe for HP?
Bast1nda

Damn, I stuffed 175 grams of dry! All the products just had to be thrown out, the stove even refused to knead (((((
