Ingredients

1 liter of warm milk
300 ml of mineral water
3 large eggs
a pinch of salt
2 tablespoons vegetable oil

Cooking method

  • Sift flour, add eggs, milk, water, oil and salt. Knead the dough without lumps. The dough should be thin so that it is easy to pour the thin pancakes all over the pan.
  • I bake in a Teflon pancake pan without oil. The thinner the pancake, the faster it bakes.
  • Pour, with a slight movement of the hand, distribute over the pan, bake for 10-12 seconds on one side, turn over and the same amount on the other. Remove the pancake, leave the pan on the stove for 5 seconds, pour the next one.
  • On the one hand, the pancake turns out to be ruddy, on the other, pale.
  • Put the filling on the ruddy side.
  • Meat filling.
  • 500 gr chicken hearts
  • 1 pc onion
  • salt
  • a bunch of greens.
  • Boil the hearts and mince together with the RAW onion, layered, add chopped herbs.
  • Curd filling
  • 600 gr fat cottage cheese
  • 1 egg
  • 2 tbsp condensed milk
  • zest of 1 orange
  • Mash cottage cheese with a fork and mix with condensed milk and egg + zest (optional)
  • Wrap the filling with an envelope.

  • Turn seam side down and crush lightly by hand, place in refrigerator storage tray or freeze.
  • Fry the finished pancakes on both sides over medium heat in butter.

Today I stuffed pancakes with potatoes and mushrooms. The filling is very simple to prepare.
Chop the onion and mushrooms finely, fry in vegetable oil with a little butter. Season with salt to taste. Boil the potatoes in salted water, drain the water, add mushroom frying to the pot with the potatoes and crush everything into mashed potatoes.
