Wheat-buckwheat bread with cottage cheese

Ingredients

Water 200 g
Kefir 200 g
Aged dry cottage cheese 80 g
Buckwheat flour 100 g
Wheat flour 320 g
Sugar 1 tbsp. l.
Salt 1.5 tsp.
Vegetable oil 2 tbsp. l.
Fresh yeast 10 g

Cooking method

  • Grind yeast with sugar.
  • Pour kefir, water, yeast with sugar, vegetable oil at the bottom of the HP bucket. Crumble the curd. Pour flour and salt on top. Tracking the bun. Depending on the cottage cheese, add water / flour.
  • Knead the dough on the Dough mode.
  • At the end of the program, place the dough on a floured table. Wrinkle, form a bun from the edges to the center. Transfer to a greased form. Let it increase 2-2.5 times.
  • Sprinkle with water before baking. Bake with steam for the first 15 minutes at 220C, then 15 minutes at 200C and until tender at 180C.
  • Cool the finished bread on a wire rack (preferably on the side). Grease with vegetable oil if desired.

For HP, I reduced only the amount of water to 150 ml, but all the same, during the kneading and control process, the kolobok added 4 tbsp. l. flour.
