Our Choco-Pai cake

Ingredients

Flour 125 g
Cocoa 20 g
Sugar 75 g
Baking powder 0.5 tsp
Cream 10% 50 ml
Egg 1 PC
Butter 100 g
Gelatin 5 g
Water 50 g
Sugar 100 g
Inert syrup
(liquid honey or jam syrup as a substitute)
35 g
Protein 1 PC

Cooking method

  • Making a layer

  • Whisk the whites into a very strong foam. Pour gelatin with 25 ml of water. Mix the rest of the ingredients in a saucepan and bring to a boil, reduce heat and leave under the lid for exactly 5 minutes. Melt the gelatin. Remove the finished syrup from the stove and immediately pour it into the protein in a thin stream, constantly whisking at high speed, continue to beat for several minutes, add gelatin and leave it at room temperature until it thickens enough that it will be difficult to stir with a spoon.

  • While the layer hardens, we make a biscuit:
  • Mix all the ingredients for the biscuits. We spread the resulting rather thick dough on a baking sheet with a spoon and with our hands moistened with vegetable oil so that the dough does not stick, we form even hemispheres with a diameter of 4-5 cm. Leave enough space between these structures, as in the oven they will blur a little. We bake at a temperature of 200g for 15 minutes.

  • We take one biscuit and put on it a layer of cream two thick and close it with another one.

Note

My mistake was that it was necessary to let the cream on the cookies set well (I think it can be in the refrigerator for 3 hours), but only then put the second cookie on top.
Delicious! I think children will especially like it.
