  • Ingredients:
  • Red bitter pepper (hot) - about 600-700 grams (ready-made, you get 450-500 grams of pepper fillets)
  • Vegetable oil - 3 tbsp. l
  • Garlic - crush 2-3 cloves
  • Dill stems - thick stems with a fragrant smell 4-6 pcs.
  • Aromatic vinegar - 5 tbsp. l
  • Mustard seeds - 1 coffee l.
  • Dill seeds - 1 box l.
  • Coriander seeds - 1 box l
  • Mustard seeds - 1 coffee l.
  • Fragrant peppers - 5-6 pcs.
  • Salt, sugar to taste - salt 1 tsp, sugar 1 tbsp. l.

  • Preparation:

  • - Put fresh peppers for 1-1.5 weeks to wither a little.

  • - now the peppers need to be grilled / oven-baked so that black bubbles form and it is possible to peel the peppers. I baked peppers on a gas stove on a flame divider - it turned out quickly and conveniently. I put the ready-made peppers in a bag for steaming.

  • Fillet of hot red pepper marinated

  • - now I cut the pepper in half, put it on the board with the peel down, and remove the pulp of the pepper with a sharp knife in layers, ribbons. Fillet is removed from hot pepper very well and quickly. I remove the seeds, leaving only a little for spiciness.

  • I put pepper fillets (different sizes) in a bowl.

  • Making the marinade.
  • In a ladle I heat up oil, vinegar, add all the spices, salt and sugar.
  • - I let the marinade boil and boil for a few minutes.
  • - pour the peppers with marinade, add garlic, dill stalks.
  • - I mix the peppers with the marinade, cover with foil, let it brew in the heat on the table for several hours.
  • - I put the peppers in a jar and put them in the refrigerator for storage.

The combination of bitterness with marinade softens the taste, gives the peppers a certain piquancy, a pleasant taste.
