Ingredients

500 gr wheat flour
1.5 tsp yeast (dry)
450 gr pumpkin
1.5 tsp salt
2 tbsp sugar

Cooking method

  • I found the recipe in my notebook with a note: "recipe for the valet Louis XIV from 1654".   • Cut the pumpkin into pieces and boil or cook in a double boiler. I steamed the pumpkin. Place on a sieve and rub or puree with a blender. Add all ingredients to the bread maker:
  • - yeast
  • - flour
  • - pumpkin puree
  • - salt
  • - sugar
  • I did it in Panasonic and chose Diet XL size. Unfortunately, Dietetic gave me a too fried crust, since the color of the crust is not set in this mode.

The fried crust haunted me and I decided to repeat it again, but using a different "semi-automatic" baking algorithm. It turned out much better. Thinner crust, taller loaf and softer crumb. Despite the complete absence of oil, the bread does not crumble at all.

This time I boiled the pumpkin, the pumpkin turned out to be more juicy, so I took less - 420 g of pumpkin puree.

I put the mashed potatoes in a bucket of HP, added yeast and sugar. I put it in an idle HP for 15 minutes for preliminary activation of the yeast.

I added flour and salt, turned on the "Pizza" mode. The batch is heated. At the end of the program, I left it to come for about 1 hour. I kneaded the dough in a bucket with a silicone spatula. You can turn on the kneading on any program, without leveling T, for example - "Pelmeni" for 1 minute.
I let the dough rise again.

I tried the oven in two ways, on the main program and, as described, on a semi-automatic. The result is the same. Now I bake in the main mode. I put it at night and in the morning I get a delicious bread. Reduced sugar by half a spoon, next time I'll try to put one spoon of sugar.
