Blackberry jam

Ingredients

Blackberry 1 kg
Jelly sugar
(or 1 kg of regular sugar
+ 1 sachet
1 kg
One lemon juice

Cooking method

  • 1.Sort out the blackberry. It is advisable not to wash the berries, but if necessary, carefully pour over the water and let the water drain.
  • 2.Stir the blackberries with sugar and leave overnight.
  • 3.Bring the berry and lemon juice to a boil while stirring and cook for 4 minutes.
  • 4.Make a test for thickening, pour into jars scalded with boiling water and close immediately.
  • According to the same principle, they prepare jam from raspberries or from a mixture of these two berries.

Blackberries are gray raspberries, fruits of the shrub of the same name up to 1.5 m high with trifoliate leaves and white flowers in corymbose racemes. Berries are black or black-red with a bluish bloom, juicy polystyrene, shaped like raspberries; taste from sweet and sour aromatic to sour and almost no aroma.

Distributed in North America and Eurasia; in the former USSR - in the European part, Crimea, the Caucasus, Western Siberia, Central Asia. It grows in forests, among shrubs, in clearings, in ravines along the banks of rivers, streams, in forest and floodplain meadows, grown in gardens and vegetable gardens.

The fruits (ripen in August) contain 5.3% sugars (fructose and glucose), 2% organic acids (malic, citric, tartaric), 15 mg% vitamin C, carotene, B vitamins, nitrogen, pectin and tannins.

Blackberries are used for fresh food, suitable for freezing and processing into jams, preserves, compotes, jelly, marmalade, juice, wine, liqueurs, tinctures. Blackberries should be picked in dry weather, they are a very tender berry. Stored under normal conditions for 1-2 days, at a temperature of O ° C - up to a week.

berries at night did not fall asleep, because after defrosting they are so small, beat with a blender, rubbed them through a sieve, added lemon juice, zhelfix mixed with 2 tbsp. l. sugar (as it is written in the instructions for the zhelfix), boiled, added the rest of the sugar, boiled for 4 minutes and a mustache - after cooling down, an excellent confiture is ready
