Ingredients

Wheat flour 500 grams + 50 grams
Potato broth 210 ml
Curd serum 100 ml
Salt 10 grams
Sugar 15 grams
Olive oil 50 ml
Active yeast 5 grams

Cooking method

  • Potato broth and curd whey can be replaced with water.
  • Put all the products in the bucket of the bread machine, and knead the dough in the "Dough" mode.
  • The state of the kolobok after the second batch is very soft.
  • Next, we stop the bread maker, take out the dough and place it in a greased bowl with 1 tbsp. l. olive oil, turn the dough several times so that it is completely coated with oil.
  • Proofing in the oven at a temperature of 30 * C - until the dough doubles.
  • We knead the dough in the same bowl very well and then make a ball out of it, trimming it from the center to the edges and crushing the unevenness under it.
  • Prepare a tall form (I have a glass pan with a diameter of 20 cm and a height of 9 cm), grease it inside with olive oil, sprinkle with flour and put the prepared dough in the pan.
  • Proof the dough in the oven at a temperature of 30 * C until it increases in volume, until the dough rises slightly above the edge of the mold.
  • Bake at 180 * C until cooked.
  • Here's what happened.
  • Height of bread is 14 cm, diameter is 20 cm, weight is 860 grams.
  • Bread while resting, slicing will be later.

I constantly keep boiled potatoes together with broth and cottage cheese whey in the freezer.
When necessary, I defrost it and use it for dough - all together or separately, as desired.
The result is always pleasing !!!!

In the beginning, I had an accident. Having loaded everything dry, I gently tamped the flour with my hand so that the liquid would not leak to the yeast ahead of time, carefully (!!!!) poured cold potato broth, and it treacherously leaked all over the mixer area and to the very bottom !! I had to knead the dough in pizza mode. After the dough stood in a 26 cm tin, I took it off before baking. The bread turned out to be very tasty !!! I especially liked the aroma of potatoes when baking, drooling and dripping on the table !!!
I can imagine how it would have come out if there hadn't been an accident "crooked handles".

Thanks to the Author for the recipe and for the Science of the Kolobok !!! The bread turned out to be very tasty, a little dense, but I have not yet learned how to "feel" my bun. And a little crooked, apparently due to the peculiarities of the bucket - it is long for a large volume of bread (1.25 kg), and I baked a small loaf according to the recipe, probably before baking it is worthwhile to slightly flatten the dough with your hands along the length of the mold. And so I'm happy.
