Musambe - Azerbaijani vegetable stew (+ video)


large potatoes 3 pcs.
large eggplant 3 pcs.
Bulgarian pepper 3 pcs.
turnip onion 1 PC.
fresh tomato 3 pcs.
vegetable oil 3-5 tbsp. l.
ground ginger 1 tsp
garlic 3-4 tooth.
pepper mix taste
salt taste
any greens 1 bundle

Cooking method

Chop the onion and fry in vegetable oil.
Peel the eggplants in strips. Cut into half rings. Add to the onion and fry for 5 minutes.
Peel the pepper. Cut into half rings. Pour into a saucepan. Fry for 5 minutes.
Finely chop the tomatoes. If desired, remove the peel (I did not remove it). Add to the pan. Mix. Fry for 5 minutes.
Cut the potatoes into small pieces. Add to the pan. Season with salt and pepper.
To cover with a lid. Reduce heat. Simmer until vegetables are cooked.
Once the vegetables are ready, add finely chopped garlic and ginger. Mix. Cover. Let it simmer for another 5 minutes.
Add chopped greens. Stir and remove from heat.
