Mango Amba Sauce (+ video)


mango large 1 PC.
olive oil 2 tbsp. l.
ground coriander 1/2 tsp
ground cumin 1/2 tsp
sumac 1/2 tsp
curry 1/3 tsp
chili flakes 1/3 tsp
garlic 1-2 teeth.
turmeric 1/3 tsp
brown sugar (regular) 60 g
lemon juice (apple cider vinegar) 4 tsp
salt taste
water 120-200 ml

Cooking method

Heat the oil. Add finely chopped garlic. Heat for 20-30 seconds for the garlic to release its flavor.
Pour the spices with oil. Mix.
Pour lemon juice into a saucepan with a thick bottom, add sugar and water.
Add chopped mango.
Cook until the mango is soft. Add water if necessary.
Pour in the oil with spices.
Salt and stir.
Allow to cool. Put in the refrigerator for 6-8 hours to steep the sauce.
