Kefir 2.5% 125 ml
Flour / s 250 g
Rye flour 130 g
Sugar 1 tbsp. the spoon
Salt 1.5 tsp
Fast acting yeast 1.5 tsp
Kvass wort concentrate (with malt content) 1.5 tbsp. spoons
Vegetable oil 2 tbsp. spoons

Cooking method

Put the ingredients in the form according to the list, tap water is lukewarm, kefir at room temperature. Sow flour through a sieve and mix, the weight of flour is approximate, depends on flour, I use Perm flour. Check on the kolobok.

The bread turns out to be baked, light (lies calmly in the palm of your hand after baking). The pulp of the bread is elastic and does not crumble. I adjusted the recipe for the Moulinex OW240E30 Pain & Delices bread maker, otherwise you can bake in the oven, stir in the bread maker, only in this case I would have kept the dough for an hour or an hour and a half longer.
